OUR APPROACH

We specialise in creating unique spirits by the reracking of spirit into
premium finishing casks that are sourced from distilleries and vineyards
across the globe.

SHERRY CASKS

Casks previously used in sherry production are usually made of European oak. These casks impart to the maturing whisky a strong, rich flavour with a drier and spicier characteristic. Examples of these casks are Pedro Ximénez (intense dried fruit sweetness), Oloroso (darker, richer style) and Fino (nutty, often with saline notes).

PORT CASKS

Portuguese version of the sherry wine, Port is a trademark bound to the region of Douro Valley. The effect of port finishing cask on the whisky will depend on the dryness or sweetness of the port. A sweet port cask will usually add the flavours of dark fruits and a richer colour, as opposed to a dry port finish.

MADEIRA CASKS

Continuing with fortified wine, Madeira is another example of successful flavour pairing. It is made on a small volcanic island 500 miles off the coast of Portugal, varying from dry to very sweet. Whisky matured in Madeira casks usually takes on the spiciness and the fruitiness of the wine, even if the Madeira is dry.

RUM CASKS

Although rum finishing casks are not as commonly used as port, sherry or wine casks, they have become more popular in recent years. Rum casks typically impart the exotic, juicy tropical notes and a lasting spicy finish to the flavour of the whisky. These casks are now used around the world to finish single-malt and blended whiskies.
